Q Craft is the vision of chef Brannon Fetzer and his aim of making traditional BBQ available to California wine country. Realizing that this flavor was not accurately represented on the culinary spectrum, Fetzer decided to dive back in to his roots of Texas BBQ and bring his own version of flavors of both the traditional as well as the obscure.
A graduate of the New England Culinary Institute in Montpelier, VT, Brannon worked his way up through the ranks of some of the country’s finest dining establishments, including El BizCocho in San Diego, La Toque, Angele, as well as the group now operating Cucina Urbana in San Diego.
Brannon’s approach to BBQ puts a modern spin and locavore mentality to a style of cuisine that is entrenched in Southern tradition, and, as Fetzer thinks, might be ripe for a little modernization. His smoked meats are prepared using traditional BBQ techniques and flavors, while his sauces and pairings are the objects of his creative style and zest.
Brannon has always been an advocate of utilizing fresh, locally produced, seasonal ingredients which has led him to his current efforts to develop a farm to table approach to BBQ and to the mobile food scene. His ingredients for his food are sourced exclusively from the bounty of Sonoma and Marin counties.
Leveraging his extensive travels abroad throughout Southeast Asia and Western Europe, Brannon brings his unique style of flavors to the BBQ scene and to the wine country food scene.
